Why Mayonnaise Is So Hard to Make
Mayonnaise is a metastable emulsion: oil droplets dispersed in a water phase containing egg yolk, vinegar and seasonings. Three factors determine whether your product survives transport and shelf life:
- Droplet size. For a stable, glossy mayonnaise, the oil droplets must be reduced to the micrometer range and tightly distributed. Weak shear leaves coarse droplets that coalesce and separate.
- Air control. Air whipped into the batch causes oxidation, off-flavors, oversized fill weights and bacteria growth. Open-top mixers cannot remove it.
- Viscosity management. Finished mayonnaise can reach tens of thousands of cP. As viscosity rises during emulsification, an underpowered mixer stalls before the batch is complete.

How a Mayonnaise Making Machine Works

- Water-phase and oil-phase preparation vessels — jacketed tanks where egg yolk, water, vinegar and seasonings (water phase) and liquid oil (oil phase) are pre-mixed and tempered at controlled temperatures.
- A vacuum emulsifying main vessel — the heart of the line. Oil and water phases are drawn into the main tank under vacuum, where a high-shear rotor–stator homogenizer breaks the oil into micro-droplets. - Heating and cooling jacket — steam or electric heating for phase preparation, and circulating water/glycol cooling to bring the finished batch down to filling temperature.
- Discharge and transfer — a sanitary screw pump or rotor pump moves the thick, finished mayonnaise to the filling line without destroying the emulsion structure.
